A Brief History of Bulgarian Cuisine
We have already mentioned that nowadays the cuisine combines the traditions and tastes of the Balkan peoples with those of the Asian world. In the past, the creation of the Bulgarian state marked the beginning of the merging of the kitchens of the Thracians, Slavs and Proto-Bulgarians. Thus, a common national cuisine is gradually being built, in which each of the ethnic groups has its contribution.
According to the researches, the main ingredients of ancient cuisine in our lands were traditional vegetables (cabbage, carrots, beets, turnips, onions, garlic), various types of meat (sheep, goat, pork, beef, poultry, game), cereals ( millet, oats, barley, rye, wheat), as well as legumes (beans, lentils, peas, vetch). Later (sometime around the 16th and 17th centuries), recipes began to be enriched with plants and animals found in America. Previously unknown foods such as beans, peppers, tomatoes, potatoes, corn, sunflowers, turkey and others appear. But that’s not all, the mix becomes even bigger with the addition of rice, eggplant and special spices from the east. After the Liberation, European cuisine began to have a serious influence.
After 1965, many of the main ingredients were missing from the market, so people began to replace them with others that are still part of our national cuisine. For example, butter has been replaced with lard, olives – with pickles… Balkantourist creates some of the emblematic dishes of our country. Then the transition required other innovations such as various modifications of “Shopska salad”, “Shepherd’s salad”, “Mill salad”, kavrma.

Why the Chocolate is So Favorite
Chocolate is not just one of the many existing desserts – it is a real temptation. And if you’re wondering why so many people around the world can’t resist it, even though it’s quite high in calories and it’s not good to overdo it, we’ll answer right away. The benefits outweigh the harms.
Why Do We Love Chocolate?
First of all, because it is so tasty and there are no two opinions on this issue. In addition, the slow melting of a bar of chocolate in the mouth can be compared to a passionate kiss – it increases the waves on which the brain works and increases the heart rate. This is confirmed by a 2007 study by scientists from the University of Sussex.
Pros of Chocolate
Naturally Analgesic
It may sound strange, but it’s true. The reason is that when it enters our stomach, the cocoa contained in it stimulates the additional production of endorphins and activates the pleasure centers. This, according to experts, can reduce real pain, and we tend to believe them.
Makes the Skin More Radiant and Young
The claim is made by German researchers, according to which chocolate absorbs ultraviolet light and protects the skin from aging. It also increases blood flow.
Gives Energy
This must well known by everyone. The good thing about chocolate is that, unlike energy drinks, it does not lead to a sharp drop in energy after a while.
It Makes us Smarter
In 1996, a study was published claiming that the smell of chocolate was soothing. Another study 10 years later showed that consuming more cocoa products increased blood flow to the brain after 5 weeks.

As you can see, there is nothing pretentious. The only more complicated thing is to have the patience to wait it to cool.
It is prepared by placing all the products in a double-bottomed pot. Leave on low heat, stirring, until sugar is melted. Then pour into a suitable container and leave for 24 hours in the freezer.
Interesting fact: Ice cream has accompanied the lives of people for thousands of years. The first such cold dessert appeared in ancient China 5,000 years ago. Chinese emperors mixed snow and ice brought from the mountains and added oranges, lemons, pomegranate seeds, wine and honey. It is believed that this recipe, as well as the method of preparation were kept secret and only in the 11th century were discovered in the book “Shi-king”.
